  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 3 tablespoons cornstarch
  • 2 cups fresh pineapple chunks (or frozen, thawed)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 2 tablespoons neutral oil for cooking

Instructions

  1. Press the tofu between clean kitchen towels for 15 minutes to remove excess moisture.
  2. Cut the pressed tofu into 1-inch cubes and coat them with cornstarch.
  3. Heat oil in a skillet over medium-high heat. Add the tofu in a single layer and cook for 3-4 minutes until golden brown.
  4. Flip the tofu and cook for another 3 minutes until both sides are browned. Set aside.
  5. In the same pan, sauté sliced bell peppers and onion for about 5 minutes.
  6. Add minced garlic and ginger; cook for an additional 30 seconds until fragrant.
  7. Stir in pineapple chunks and caramelize for about 2-3 minutes.
  8. Mix soy sauce, rice vinegar, and maple syrup in a bowl; pour over the pan mixture along with the crispy tofu. Stir gently for about 2 minutes.
