  • 1 cup graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 vanilla bean, split and seeds scraped
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into cupcake liners.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Stir in sour cream, heavy cream, vanilla seeds, and extract.
  4. Divide cheesecake mixture into liners. Bake for 20–25 minutes until slightly jiggly in the center.
  5. Cool cupcakes at room temperature before refrigerating for at least 2 hours.
  6. Sprinkle sugar on top and use a kitchen torch to caramelize just before serving.
