  • 2 cups water
  • 1 cup red bell pepper, diced
  • 1 cup cucumber, diced
  • 1 cup shredded carrots
  • 1 cup green onions, sliced
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup chopped peanuts
  • 1/4 cup sesame seeds
  • 1/4 cup soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, combine rinsed quinoa and water. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes until fluffy.
  2. Chop red bell pepper, cucumber, carrots, green onions, and cilantro.
  3. Whisk together soy sauce, lime juice, honey, sesame oil, ginger, garlic, salt, and pepper in a small bowl.
  4. In a large bowl, mix cooled quinoa with veggies, peanuts, and sesame seeds. Pour dressing over and toss until well coated.
  5. Refrigerate for at least 30 minutes before serving to meld flavors.
