  • 1 box strawberry cake mix
  • 4 eggs
  • 1 1/3 cup water
  • 2/3 cup vegetable oil
  • 3 oz box of strawberry Jello
  • 1 stick unsalted butter – softened
  • 7.5 oz vegan marshmallows fluff
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 4 tbsp heavy whipping cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the cake mix, eggs, water, vegetable oil, and strawberry Jello until well mixed.
  3. Pour the batter into a prepared bundt pan.
  4. Bake for 35-40 minutes or until a toothpick inserted comes out clean.
  5. Cool the cake in the pan for 10 minutes before transferring to a cooling rack.
  6. While cooling, prepare the cream filling by mixing softened butter, vegan marshmallows fluff, powdered sugar, and vanilla extract until smooth.
  7. Gradually add heavy whipping cream until creamy and pipeable.
  8. Once cooled, create holes in the bottom of the cake and fill with the cream mixture.
