  • 1/4 cup fresh cilantro
  • 1 tablespoon fresh oregano (or basil)
  • 2 tablespoons fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar (or apple vinegar)
  • 2 cloves garlic, minced
  • 1/2 teaspoon chili flakes (optional, for heat)
  • 2 large sweet potatoes, peeled and cut into chunks
  • 1/4 cup unsalted butter (or olive oil for dairy-free)
  • 1/2 cup heavy cream or milk (or coconut milk for a dairy-free option)
  • 1/4 teaspoon cinnamon (optional, for extra flavor)

Instructions

  1. Prepare sweet potatoes by peeling and cutting them into chunks. Boil in salted water for 15-20 minutes until fork-tender.
  2. While potatoes cook, blend parsley, cilantro, oregano, lemon juice, olive oil, apple cider vinegar, minced garlic, salt, and pepper until smooth for the green sauce.
  3. Heat olive oil in a skillet over medium-high heat; season steaks with salt and pepper. Cook for 4-5 minutes on each side for medium-rare.
