  • 4 large organic sweet potatoes, peeled and cubed
  • 23 tablespoons extra virgin olive oil
  • 1 cup almond milk
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 teaspoon ground cinnamon
  • 1 cup organic raisins, soaked and drained
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil sweet potato cubes until fork-tender, about 15 minutes; drain well.
  3. In a large bowl, mash cooked sweet potatoes with olive oil, almond milk, brown sugar, vanilla extract, cinnamon, and nutmeg until smooth.
  4. Fold in soaked raisins and half of the vegan marshmallows.
  5. Transfer mixture to a greased baking dish; top with remaining marshmallows and raw pecans.
  6. Bake for about 45 minutes until golden and bubbly.
