  • 1/2 cup whole milk
  • 1 cup chopped pecans (toasted)
  • 1 cup powdered sugar
  • 1/4 cup unsalted butter, softened
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream softened butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla.
  4. Alternate adding dry ingredients with sour cream and milk until just combined. Fold in toasted pecans.
  5. Divide batter between prepared pans and bake for about 35 minutes or until a toothpick comes out clean.
  6. For the frosting, beat together powdered sugar, butter, milk, vanilla extract, and additional chopped pecans until smooth.
  7. Once cooled, assemble the cake by layering with frosting between the cakes and on top.
