- 8–10 Frozen Soup Dumplings
- 1 tbsp neutral oil
- 1 tbsp Thai red curry paste
- 1 cup chicken stock or vegetable stock
- 1/3 cup coconut milk
- 1 tsp soy sauce
- 1 tsp sugar
- 2 kaffir lime leaves
- Fresh Thai basil leaves for garnish
- Heat the neutral oil in a pot over medium-high heat. Add the red curry paste and sauté for 1-2 minutes until fragrant.
- Pour in the chicken or vegetable stock and stir until the curry paste dissolves completely.
- Stir in coconut milk, soy sauce, sugar, and kaffir lime leaves. Bring to a gentle simmer.
- Add frozen soup dumplings into the bubbling sauce, cover the pot, and steam for about 12 minutes until fully cooked.
- Remove from heat, discard kaffir lime leaves, and toss in fresh Thai basil before serving.
