  • 1 medium head of cauliflower
  • 1 small red onion
  • 1 cup cherry tomatoes
  • 1/2 cup Kalamata olives
  • 1/4 cup green olives
  • 2 tablespoons capers
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red apple vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions

  1. Blanch the cauliflower florets in boiling salted water for 2-3 minutes until slightly tender. Drain and rinse under cold water.
  2. In a bowl, whisk together olive oil, red apple vinegar, lemon juice, Dijon mustard, oregano, salt, and pepper.
  3. In a large bowl, combine the blanched cauliflower, olives, capers, red onion, and cherry tomatoes. Add fresh parsley and basil if desired.
  4. Pour the dressing over the salad and toss gently to coat. Let sit for 10-15 minutes before serving.
