  • 2 ripe avocados (diced)
  • 2 ripe mangoes (diced)
  • ¼ red onion (finely diced)
  • ¼ cup fresh cilantro (chopped)
  • Juice of 23 limes
  • 23 cups cooked rice or quinoa
  • Olive oil (for cooking)
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • Dressing: 2 tablespoons olive oil, 1 tablespoon lime juice, ½ teaspoon honey or maple syrup (optional)
  • Optional toppings: sesame seeds, red pepper flakes, chopped green onions, tortilla strips or crispy wonton strips

Instructions

  1. Heat olive oil in a skillet over medium heat. Season shrimp with chili powder, cumin, garlic powder, salt, and pepper. Cook until pink and opaque, about 3-4 minutes.
  2. While shrimp cooks, prepare avocados, mangoes, red onion, cilantro, and jalapeño if using.
  3. In each bowl, layer cooked rice or quinoa as the base. Top with shrimp and a mix of avocado and mango salsa.
  4. Drizzle with dressing if desired and add any optional toppings.
