  • 1 pound large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 3 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • Salt and pepper to taste

Instructions

  1. Rinse shrimp under cold water and pat dry. Season with salt and pepper.
  2. Wash and trim asparagus, slice red bell pepper, rinse snap peas, and mince garlic and ginger.
  3. In a bowl, mix soy sauce, cornstarch, and water until smooth.
  4. Heat oil in a large skillet over medium-high heat; sauté garlic and ginger for 30 seconds.
  5. Add shrimp in a single layer; cook until pink (about 2–3 minutes per side), then remove from pan.
  6. Stir-fry asparagus and red bell pepper for about 2–3 minutes until slightly softened.
  7. Add snap peas; stir-fry another couple of minutes until bright green.
  8. Return shrimp to the pan; pour sauce over everything and cook for an additional minute until thickened.
