  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 10 oz cremini mushrooms, sliced
  • 8 oz cream cheese
  • 3/4 cup Parmesan cheese, finely grated
  • 1/2 cup Gruyère cheese, grated
  • Fresh thyme leaves
  • Salt and black pepper to taste
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. In a skillet over medium heat, melt butter with olive oil. Sauté diced onion until soft (about 5 minutes), then add minced garlic and sliced mushrooms; cook until golden brown (around 8 minutes).
  3. Stir in thyme, salt, pepper, and optional apple vinegar; cook until liquid evaporates.
  4. Add cream cheese, Parmesan, and Gruyère; mix until smooth. Incorporate one beaten egg into the mixture.
  5. Roll out the puff pastry on a floured surface; cut diagonal strips along the sides while leaving the center intact.
  6. Spread filling down the center of the pastry; fold over ends and braid strips over the filling.
  7. Place on a baking tray lined with parchment paper and brush with remaining beaten egg.
  8. Bake for 20–22 minutes or until golden brown.
