  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil

  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 cup diced tomatoes

Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Form into small meatballs about 1 inch in diameter.
  2. Heat olive oil in a large pot over medium heat. Brown the meatballs in batches for about 5 minutes and set aside.
  3. In the same pot, sauté chopped onion until translucent (3-4 minutes).
  4. Pour in chicken broth and bring to a boil. Reduce heat and add meatballs back into the pot; simmer gently.
  5. After about 15 minutes of simmering, stir in heavy cream and fresh spinach until wilted (about 2 minutes).
