  • ½ pound ground chicken sausage
  • 1 tablespoon olive oil
  • ½ large onion (diced)
  • 3 cups kale (cleaned and chopped)
  • 1 tablespoon garlic (minced)
  • 2 stalks celery (chopped)
  • ½ large apple (chopped)
  • Fresh herbs: thyme, sage, rosemary
  • Salt and black pepper
  • 2 tablespoons walnuts or pecans
  • ½ cup crumbled feta cheese

Instructions

  1. Preheat oven to 400°F.
  2. Slice each acorn squash in half and scoop out the seeds. Place cut side down on a lined baking sheet.
  3. Bake for about 20 minutes until fork-tender.
  4. In a skillet over medium heat, cook the ground sausage until fully browned.
  5. Add olive oil if needed and sauté onions until softened, then add kale, garlic, celery, apples, and herbs until everything is tender.
