  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head garlic
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon nutmeg
  • 1/2 cup grated parmesan cheese, divided
  • 2 cups shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste
  • Fresh chives, for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Roast the garlic by cutting off the top, wrapping it in foil with olive oil and salt, and baking for about 30 minutes until soft.
  2. Grease a 9×13-inch baking dish with butter.
  3. Thinly slice the potatoes using a mandoline.
  4. Layer the potato slices upright in the baking dish.
  5. In a saucepan, combine heavy cream, milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper; stir until melted.
  6. Squeeze roasted garlic cloves into a bowl and mash into a paste; mix into the creamy mixture.
  7. Pour the mixture over the layered potatoes and cover with foil. Bake for 40 minutes.
  8. Remove foil, top with remaining cheeses, and bake uncovered for another 30 minutes until bubbly and golden.
  9. Allow to cool slightly before serving; garnish with fresh chives.
