  • 2 cups pitted cherries
  • 1 1/3 cup granulated sugar
  • 2 large eggs
  • 5 tablespoons unsalted butter (melted)
  • 1/3 cup canola oil
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch process cocoa powder
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 400°F (200°C). Arrange cherry halves on a parchment-lined baking sheet and sprinkle with sugar. Roast for 10 minutes to enhance sweetness.
  2. Lower the oven temperature to 325°F (160°C). Prepare an 8×8 baking pan with non-stick spray and parchment paper.
  3. In a bowl, sift together flour, cocoa powder, cornstarch, and salt.
  4. In another bowl, beat sugar and eggs until fluffy. Mix in melted butter, oil, and vanilla extract.
  5. Fold in dry ingredients gently until just combined. Add half of the roasted cherries and chocolate chips.
  6. Pour batter into the prepared pan and bake for 40-50 minutes until edges are set but center is slightly undercooked.
  7. Allow brownies to cool completely before slicing and serving with remaining roasted cherries on top.
