  • 8 ounces ricotta cheese
  • 3 tablespoons olive oil (divided)
  • 4 minced garlic cloves (divided)
  • 1 crusty bread loaf
  • Fresh basil leaves
  • Salt and black pepper
  • Balsamic glaze

Instructions

  1. Preheat oven to 400°F. In a baking dish, toss cherry tomatoes with 1 tablespoon olive oil, 2 minced garlic cloves, salt, and pepper. Roast for about 20 minutes until they burst.
  2. Blend ricotta with 1 minced garlic clove, 1 tablespoon olive oil, half of the basil, salt, and pepper until smooth.
  3. Slice bread into 12 pieces; brush both sides with a mixture of 1 tablespoon olive oil and remaining minced garlic. Bake for 10-12 minutes until golden.
  4. Assemble by spreading ricotta on toasted bread and topping with roasted tomatoes and remaining basil. Drizzle with balsamic glaze before serving.
