  • 1 3/4 cups all-purpose flour (for batter)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp pumpkin pie spice
  • 1/2 cup melted unsalted butter (for batter)
  • 1 1/4 cups granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup canned pumpkin puree
  • 3/4 cup buttermilk

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare muffin tins with liners.
  2. For the streusel, combine cold butter, brown sugar, flour, and salt in a bowl until crumbly. Set aside.
  3. In another bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
  4. In a large bowl, mix melted butter, granulated sugar, eggs, vanilla extract, pumpkin puree, and buttermilk until well combined.
  5. Gradually fold dry ingredients into the wet mixture until just combined.
