  • 110g coconut oil
  • 170g pumpkin puree
  • 200g all-purpose flour
  • 2 tsp baking powder
  • 3 tsp pumpkin spice

  • 1/2 tsp vanilla extract
  • 2 tbsp milk

Instructions

  1. Preheat your oven to 175°C (350°F). Grease a small springform pan and dust it with flour.
  2. In a mixing bowl, beat the eggs with brown sugar until light and fluffy. Add coconut oil, pumpkin puree, and vanilla extract; mix well.
  3. In another bowl, whisk together flour, baking powder, and pumpkin spice. Gradually fold into the wet mixture until just combined.
  4. Pour batter into the prepared pan and bake uncovered for about 25 minutes; then cover with foil and bake for an additional 20 minutes. A toothpick should come out clean but slightly moist.
  5. Allow to cool before glazing with a mixture of powdered sugar, milk, and maple syrup.
