Ingredients

Scale
  • 2 double shots of blonde espresso
  • ¼ cup packed light brown sugar
  • 2 tbsp pumpkin puree
  • 12 cups ice cubes
  • Cold oat milk, to taste
  • 2 cinnamon sticks or 1½ tsp pumpkin pie spice
  • ½ cup warm water
  • 1 tsp vanilla extract

Instructions

  1. Prepare the syrup by whisking together brown sugar, pumpkin puree, cinnamon sticks (or pumpkin pie spice), and warm water in a small saucepan. Simmer on low heat for 2-3 minutes until thickened slightly.
  2. Remove from heat and stir in vanilla extract (and maple extract if using). Strain through a sieve for a smoother syrup if desired.
  3. In a sealable jar, combine one double shot of espresso with 1-2 tablespoons of the syrup and ice cubes. Shake vigorously for 20-30 seconds.
  4. Pour the mixture into a glass without ice cubes, add fresh ice, and top with cold oat milk. Dust with additional pumpkin pie spice before serving.
