  • 82 grams egg whites (41g + 45g)
  • 115 grams granulated sugar
  • 79 grams water
  • 1 cup all-purpose flour (for pie crust)
  • 1/4 cup coconut oil (for pie crust)
  • 1/2 cup organic shortening (for filling)
  • 1 tbsp pumpkin puree
  • Pumpkin pie spice

Instructions

  1. Prepare your mixing bowl by cleaning it with vinegar to ensure egg whites whip properly.
  2. Sift almond meal and powdered sugar into a bowl, then create a well in the center and fold in 41g of egg whites.
  3. In another pot, heat granulated sugar and water until it reaches 248°F while whisking the remaining egg whites until soft peaks form.
  4. Slowly pour the hot syrup into the whipped egg whites and mix until glossy peaks form.
  5. Gently fold the meringue into the almond mixture until combined, then pipe onto lined baking sheets.
  6. Let piped macarons rest for 20-30 minutes before baking at 300°F for 12-14 minutes.
