Ingredients

Scale
  • 1 box yellow cake mix
  • 4 large eggs (1 egg and 3 eggs separated)
  • 8 ounces unsalted butter (2 sticks, melted separately)
  • 1 1/2 cups pumpkin puree
  • 8 ounces cream cheese (softened)
  • 1 tablespoon vanilla extract
  • 1 cup dark brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Prepare a springform or round cake pan by lining it with parchment paper and greasing it.
  3. In a mixing bowl, combine the yellow cake mix, half a cup of melted butter, and one egg. Mix until well combined and press into the prepared pan to form the base.
  4. In another bowl, blend the pumpkin puree, cream cheese, three remaining eggs, dark brown sugar, remaining melted butter, vanilla extract, cinnamon, ginger, and nutmeg until smooth.
  5. Pour the pumpkin mixture over the cake base.
  6. Bake for about 40-50 minutes until golden brown on top—remember the center should remain gooey! Allow cooling for at least ten minutes before serving.
