  • 4 large eggs (1 egg and 3 eggs separated)
  • 8 ounces unsalted butter (2 sticks, melted)
  • 1 1/2 cups pumpkin puree
  • 8 ounces cream cheese (softened)
  • 1 tablespoon vanilla extract
  • 1 cup dark brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger

Instructions

  1. Preheat the oven to 350°F and prepare your springform or round cake pan by lining it with parchment paper and spraying lightly with cooking spray.
  2. In an electric mixer, combine the cake mix, melted butter (½ cup), and one egg until well blended. Press this mixture into the bottom of the prepared pan.
  3. In another bowl, mix the pumpkin puree, softened cream cheese, remaining three eggs, dark brown sugar, another stick of melted butter, vanilla extract, cinnamon, ginger, and nutmeg until smooth.
  4. Pour the pumpkin filling over the cake base in the pan.
  5. Bake for about 40 to 50 minutes until the top is golden brown but the center remains gooey.
  6. Allow to rest for at least 10 minutes before slicing.
