  • 2 large eggs
  • ½ cup sour cream or plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 ½ cups diced peaches (fresh, canned, or thawed frozen)
  • ½ cup all-purpose flour for streusel
  • ⅓ cup brown sugar for streusel
  • ½ teaspoon ground cinnamon for streusel
  • ¼ cup cold unsalted butter for streusel

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8 or 9×9-inch pan.
  2. For the streusel topping: Mix flour, brown sugar, and cinnamon; cut in cold butter until crumbly. Refrigerate.
  3. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Beat softened butter with sugars until light and fluffy. Add eggs one at a time, then mix in vanilla and sour cream.
  5. Gradually add dry ingredients to the wet mixture until just combined.
  6. Gently fold in diced peaches.
  7. Spread batter into prepared pan and sprinkle streusel on top.
