  • 6 to 7 ripe peaches (about 2½ pounds, sliced)
  • ¾ cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 teaspoons cornstarch
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon (optional)
  • 1 cup all-purpose flour
  • ½ cup granulated sugar (for topping)
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup cold unsalted butter (cut into small cubes)
  • ¼ cup boiling water
  • 1 tablespoon coarse sugar for topping (optional)

Instructions

  1. Preheat the oven to 375°F. Wash and slice the peaches.
  2. In a large bowl, mix peaches with ¾ cup of granulated sugar, lemon juice, cornstarch, vanilla extract, and cinnamon. Let sit for 10 minutes.
  3. In another bowl, whisk together the flour, remaining sugar, baking powder, and salt. Blend in cold butter until crumbly.
  4. Stir in boiling water until just combined.
  5. Pour the peach mixture into a greased baking dish. Dollop the dough over the top.
  6. Sprinkle with coarse sugar if desired and bake for 38 to 42 minutes until golden and bubbly.
  7. Cool for at least 15 minutes before serving.
