Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup unsalted butter (softened)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • 1 cup fresh or canned peaches (diced)
  • ½ cup unsalted butter (for frosting)
  • 1 cup packed brown sugar
  • ¼ cup milk
  • 2 cups powdered sugar
  • ½ teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until smooth.
  4. Gradually add the dry mixture to the wet ingredients until just combined. Gently fold in diced peaches.
  5. Pour batter into the prepared pan and spread evenly. Bake for 30–35 minutes or until a toothpick comes out clean. Let cool completely before frosting.
  6. To make the frosting, melt butter in a saucepan over medium heat. Stir in brown sugar, cooking for about 2–3 minutes until dissolved.
  7. Add milk and bring to a gentle boil before removing from heat. Cool slightly before whisking in powdered sugar and vanilla extract until smooth.
  8. Frost the cooled cake with the brown sugar frosting.
