  • 2 cups blackberries
  • ½ cup water
  • 1 tablespoon lemon juice
  • ¾ cup sugar
  • 8 ounces goat cheese
  • 4 teaspoons raw sugar
  • 2 teaspoons fresh thyme, minced
  • 1 egg

Instructions

  1. Make the blackberry filling: In a saucepan, combine blackberries, water, lemon juice, and sugar. Simmer over medium heat for 20-30 minutes until thickened. Mash the berries as they cook. Cool before use.
  2. Prepare the puff pastry: Thaw puff pastry and roll it out into a rectangle. Spread half of the cooled blackberry jam and crumbled goat cheese over one half of the pastry.
  3. Cut and twist: Slice the pastry into 12 strips. Fold each strip in half and twist gently to create spirals.
  4. Bake: Brush with an egg wash, sprinkle with lemon-thyme sugar, place on a lined baking sheet, and bake at 400°F (200°C) for 16-18 minutes until golden brown.
