  • 1 medium onion, peeled and halved
  • 2 tablespoons avocado oil (or olive oil)
  • 1 ½ teaspoons salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper

Instructions

  1. Let the chicken rest at room temperature for about 30-60 minutes while preheating your oven to 425°F (218°C). Prepare a roasting pan with parchment paper if desired.
  2. Place the chicken breast-side up in the roasting pan; pat dry with paper towels. Stuff the cavity with onion halves.
  3. In a bowl, mix avocado oil, salt, smoked paprika, onion powder, thyme, garlic powder, and black pepper into a paste. Brush this mixture over the chicken.
  4. Roast for approximately 70-90 minutes until the internal temperature reaches at least 165°F (74°C). Avoid basting during the last 20 minutes for crispiness.
  5. Remove from the oven and let rest for about 5 minutes before carving.
