  • 3 cups low sodium chicken broth
  • 5 ounces baby spinach
  • Juice from ½ lemon
  • ½ cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1 tsp unsalted butter
  • 1 yellow onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1 tsp salt (divided)
  • 1 tsp coarsely ground black pepper (divided)
  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • 1 tsp dried thyme

Instructions

  1. Prepare your ingredients: chop the onion and mince the garlic. Season salmon fillets with garlic powder, paprika, salt, and pepper.
  2. Heat olive oil and butter in a skillet over medium-high heat. Sear the salmon for 3-4 minutes on each side; remove from pan.
  3. Reduce heat to medium; sauté onion and garlic until fragrant. Stir in thyme, remaining salt, and pepper.
  4. Add dry orzo, toast for one minute. Pour in chicken broth; bring to a boil then simmer until liquid is mostly absorbed (about 8 minutes).
  5. Stir in spinach until wilted, add lemon juice and Parmesan cheese. Adjust seasoning as needed.
  6. Return salmon to skillet; simmer for an additional 2-3 minutes until heated through.
