  • 1 lb boneless, skinless chicken thighs or breasts
  • 8 oz uncooked penne pasta
  • 1 cup honey BBQ sauce
  • 2 tablespoons olive oil
  • 1/2 cup low-sodium chicken broth
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Chopped parsley for garnish
  • Crushed red pepper flakes for garnish
  • Shredded cheddar or mozzarella cheese for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, smoked paprika, and garlic powder. Sear until golden brown and fully cooked, then remove from skillet.
  2. In the same skillet, add chicken broth to deglaze the pan, scraping up any brown bits. Stir in honey BBQ sauce and simmer for 2–3 minutes.
  3. Add uncooked penne and enough water to barely cover the pasta (about 1 to 1½ cups). Cover and simmer for 12–15 minutes, stirring occasionally.
  4. Return the cooked chicken to the skillet and combine everything for an additional 2–3 minutes.
  5. Serve warm topped with chopped parsley, crushed red pepper flakes, and shredded cheese if desired.
