  • 1 lb chicken sausage, sliced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • Salt, to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced sausage and brown for about 4–5 minutes. Remove from skillet.
  2. In the same skillet, sauté onion and bell pepper for 3–4 minutes until softened. Stir in garlic and cook for another 30 seconds.
  3. Add smoked paprika and black pepper; stir well before adding uncooked rice. Toast rice for 1–2 minutes.
  4. Pour in chicken broth and BBQ sauce; mix thoroughly. Return browned sausage to the pan.
  5. Bring to a boil, cover, reduce heat to low, and simmer for 20–22 minutes until rice is tender.
  6. Let rest covered for 5 minutes off heat before fluffing with a fork.
