  • 1/2 cup brown sugar (packed)
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • 1 cup semisweet or dark chocolate chips
  • 1/2 cup peanut butter

  1. Prepare an 8-inch or 9-inch square baking dish by lining it with parchment paper.
  2. In a large saucepan over medium heat, melt the butter and brown sugar together until bubbly and combined.
  3. Stir in vanilla extract and rolled oats; cook on low heat for about 3-4 minutes until well mixed.
  4. Pour half of the oat mixture into the prepared dish and press down evenly.
  5. In a microwave-safe bowl, melt chocolate chips and peanut butter until smooth; stir well.
  6. Spread the melted mixture over the oat base, reserving some for drizzling later.
  7. Top with the remaining oat mixture; drizzle reserved chocolate on top.
  8. Refrigerate for at least 2-3 hours until firm before slicing.
