  • 1 baguette (sliced into 1/2 inch thick rounds)
  • 1 tbsp olive oil (for brushing)
  • 250 g Baby Bella mushrooms (thinly sliced)
  • 2 garlic cloves (minced)
  • 1/4 cup apple vinegar
  • 1 package Brie cheese (sliced)
  • Salt and pepper (to taste)
  • Fresh parsley (for garnish)
  • Crushed red pepper flakes (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Arrange baguette slices on a baking sheet and brush both sides with olive oil. Toast for about 3-5 minutes until golden brown.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1 minute). Add sliced mushrooms and cook until golden brown, about 5-7 minutes. Pour in apple vinegar and simmer until reduced by half.
  3. Top each toasted baguette slice with a slice of Brie, then spoon the mushroom mixture generously over the cheese.
  4. Bake for an additional 3-5 minutes until the Brie is melted.
  5. Garnish with freshly chopped parsley before serving warm.
