  • 8 ounces yellow potatoes, diced

  • 1 jalapeno pepper, chopped
  • 2 cloves garlic, chopped
  • 1 pound ground beef
  • 2 large tomatoes, chopped
  • 3/4 cup beef stock
  • 1 tablespoon paprika
  • 1 tablespoon Mexican oregano
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat. Sauté diced potatoes, chopped onion, and jalapeño for 5 minutes until softened.
  2. Add garlic and ground beef; cook until browned (about 5 minutes).
  3. Stir in tomatoes, beef stock, paprika, oregano, and cumin. Lower heat and let simmer for 20 minutes until potatoes are tender.
  4. Serve hot over rice or with warmed tortillas. Garnish as desired.
