  • 1 box (8.5 ounces) cornbread mix
  • 2 eggs
  • â…“ cup whole milk

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a cast iron skillet, brown the ground beef over medium heat and drain excess fat.
  3. Stir in cream-style corn, frozen corn, diced tomatoes with green chilies, and taco seasoning; cook for about 5 minutes.
  4. Sprinkle 1 cup of shredded cheddar cheese over the beef mixture.
  5. In a separate bowl, combine cornbread mix with eggs and milk until just mixed.
  6. Pour cornbread batter over the beef mixture and spread evenly.
  7. Bake for 20-25 minutes or until golden brown.
