  • 1 lb ground beef (or ground turkey)
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 cup cooked black beans
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/2 cup sliced jalapeños (optional)
  • Lime wedges for serving

Instructions

  1. Preheat your oven to 425°F (220°C). Toss diced potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Spread on a baking sheet lined with parchment paper and roast for about 30 minutes until golden and crispy.
  2. In a skillet over medium-high heat, cook the ground beef until browned. Drain excess fat. Stir in taco seasoning and water; simmer for a few minutes.
  3. Heat black beans and corn in a small pot over low heat until warmed through.
  4. Assemble bowls by layering crispy potatoes, seasoned beef, black beans, and corn.
  5. Top with shredded cheese, sour cream, cilantro, diced tomatoes, green onions, and jalapeños if desired. Serve with lime wedges.
