  • 1 cup flour
  • 1/2 cup brown sugar
  • 1/2 cup butter (or coconut oil)
  • 1 cup fresh lemon juice
  • 3/4 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon zest
  • 1/4 cup water
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking pan.
  2. In a bowl, mix rolled oats, flour, brown sugar, baking soda, and salt. Melt butter (or coconut oil) and combine until crumbly.
  3. Press two-thirds of the mixture into the bottom of the pan.
  4. In a saucepan over medium heat, whisk fresh lemon juice, granulated sugar, cornstarch, and water until thickened.
  5. Pour the lemon filling over the crust and sprinkle reserved crumble on top.
  6. Bake for about 38 minutes until golden brown. Cool completely before slicing.
