  • Pinch of salt
  • ½ cup lemon curd

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg along with lemon zest, lemon juice, and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking powder, and salt; gradually add to the wet ingredients until just combined.
  5. Scoop spoonfuls of dough onto a lined baking sheet and create an indentation in each cookie.
  6. Fill each indentation with about half a teaspoon of lemon curd.
  7. Bake for 10–12 minutes or until lightly golden around the edges.
  8. Once cooled slightly, sprinkle granulated sugar on top of each cookie and use a kitchen torch to caramelize the sugar until bubbly.
