  • 2 large eggs
  • 1 cup granulated sugar (for filling)
  • 1/4 cup all-purpose flour
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix flour, 1/2 cup sugar, baking powder, melted butter, and salt until crumbly. Press three-quarters of this mixture into an 8×8-inch baking pan lined with parchment paper. Bake for 12-15 minutes until lightly golden.
  2. In a separate bowl, whisk eggs, 1 cup sugar, additional flour, lemon juice, and lemon zest until smooth. Pour this filling over the baked crust and sprinkle the reserved crumb mixture on top.
  3. Bake for an additional 20-25 minutes or until the filling is set and slightly golden. Allow to cool completely before refrigerating for at least one hour.
  4. Slice into squares and dust with powdered sugar prior to serving.
