  • 1/2 cup graham cracker crumbs
  • 2 tbsp melted butter
  • 1 tbsp sugar
  • 1/2 cup heavy whipping cream
  • 1/2 cup lemon Greek yogurt (or lemon curd mixed with whipped cream)
  • 1 tbsp powdered sugar
  • 1/2 tsp lemon extract
  • 1/4 cup lemon curd
  • 1 1/2 cups white chocolate or yellow candy melts

Instructions

  1. Prepare the Crust: Mix graham cracker crumbs, melted butter, and sugar; press into mold cavities and freeze for 10 minutes.
  2. Make the Filling: Whip heavy cream to soft peaks; gently fold in yogurt, powdered sugar, and lemon extract. Chill for 10-15 minutes.
  3. Prepare the Shell: Melt candy melts; coat the inside of each mold with chocolate mixture. Chill until set.
  4. Assemble: Pipe mousse into molds, add lemon curd in the center, then top with more mousse.
  5. Seal: Press the crust onto each mold cavity to seal.
  6. Freeze: Place molds in freezer for at least 4 hours to set.
  7. Serve: Thaw for 10-15 minutes before unmolding.
