  • 2 tablespoons olive oil
  • 1 ¼ lbs. boneless skinless chicken breast
  • lemon pepper seasoning
  • 1 teaspoon EACH: dried oregano, basil, parsley, mustard powder
  • ½ teaspoon dried dill weed
  • ½ cup dry white grape juice
  • 2 tablespoons butter
  • 1 small yellow onion, diced
  • ¾ cup carrots, diced
  • 2 sticks celery, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon hot sauce
  • ½ cup heavy cream
  • 2 cups fresh spinach
  • ½ cup Parmesan cheese, freshly grated
  • Juice of 1 lemon (34 Tbsp.)
  • ¾ cup orzo, uncooked

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season chicken with lemon pepper before searing until golden (3-4 minutes per side). Remove and let rest.
  2. In the same pot, deglaze with white grape juice, scraping up browned bits. Simmer until reduced by half, then add butter, onion, carrots, and celery. Sauté for 5 minutes.
  3. Add garlic and dried herbs; mix well. Pour in chicken broth and bring to a boil.
  4. Reduce heat, return chicken to pot, and simmer gently until cooked through.
  5. Cook orzo separately according to package instructions until al dente; drain.
  6. Stir in heavy cream and grated Parmesan into the soup until creamy.
  7. Add fresh spinach and cook until wilted (about 2-3 minutes).
  8. Finish with freshly squeezed lemon juice before serving over cooked orzo.
