  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • ¾ cup all-purpose flour
  • ½ cup brown sugar for crumble topping
  • ½ teaspoon cinnamon for crumble topping
  • ½ cup cold unsalted butter, cubed

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and 2 tablespoons sugar until well combined. Press into the bottom of a springform pan.
  3. Beat softened cream cheese until smooth; add granulated sugar and vanilla extract. Incorporate eggs one at a time, then gently fold in sour cream.
  4. Pour the cheesecake filling over the crust.
