  • 2 large eggs (room temperature)
  • 1/4 cup vegetable oil
  • 1/3 cup sour cream (or Greek yogurt)
  • 1/4 cup white sugar
  • 1/2 cup packed light brown sugar
  • 1 teaspoon vanilla essence
  • 1 1/2 cups finely grated zucchini
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, beat the eggs and mix in vegetable oil, sour cream, white sugar, brown sugar, and vanilla until smooth.
  4. Fold the wet mixture into the dry ingredients gently until just combined. Add the grated zucchini and half of the chocolate chips.
  5. Pour the batter into the prepared loaf pan and sprinkle the remaining chocolate chips on top.
  6. Bake for about 55 minutes or until a toothpick comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack.
