  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 cup fresh cranberries
  • 1/4 cup honey
  • 1/4 cup orange juice
  • 4 ounces Brie cheese, rind removed and cut into small pieces
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon butter, melted

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a medium saucepan over medium heat, heat olive oil and add cranberries. Cook until softened (about 5 minutes). Stir in honey, orange juice, ground cinnamon, salt, and pepper; let thicken slightly.
  3. Cut pockets into each chicken breast without cutting through completely.
  4. Stuff each pocket with Brie pieces and spoon in the cooled cranberry mixture.
  5. Secure pockets with toothpicks and sear in an oven-safe skillet over medium-high heat for about 2–3 minutes on each side until golden brown.
  6. Mix panko breadcrumbs with melted butter and sprinkle over the stuffed chicken.
  7. Transfer to the oven and bake for 20–25 minutes or until internal temperature reaches 165°F (74°C).
  8. Let rest for 5 minutes before serving.
