  • 1 pound chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • Lime zest from 1 lime
  • 1 teaspoon chili powder
  • 1 teaspoon brown sugar
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 to 1/2 teaspoon chipotle chili powder (optional)
  • 1/4 teaspoon pepper
  • 2 medium avocados, chopped
  • 1 cup cherry tomatoes, quartered
  • Fresh corn from 1 ear sweet corn
  • 1/3 cup finely chopped red onion
  • 1/2 red bell pepper, chopped
  • 1 jalapeño pepper, diced
  • 2 tablespoons finely chopped cilantro
  • 1 garlic clove, minced
  • 2 tablespoons lime juice for salsa
  • 1/4 teaspoon ground cumin for salsa
  • 1/4 teaspoon salt for salsa
  • 1/8 teaspoon pepper for salsa

Instructions

  1. In a bowl, mix olive oil, lime juice and zest, chili powder, brown sugar, salt, cumin, smoked paprika, onion powder, garlic powder, chipotle chili powder (if desired), and pepper.
  2. Marinate chicken in the mixture for at least 30 minutes in the fridge.
  3. Preheat grill or skillet over medium-high heat and cook marinated chicken for 5-7 minutes per side until fully cooked.
  4. For avocado salsa: combine avocados, tomatoes, corn, onion, bell pepper, jalapeño pepper, cilantro, garlic (or garlic powder), lime juice, cumin, salt and pepper in a bowl.
  5. Let chicken rest before slicing and serve topped with avocado salsa.
