  • 1 egg
  • 2 tablespoons finely chopped onion
  • 2 cloves garlic, minced
  • 1/3 cup honey
  • 1/4 cup low sodium soy sauce
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1/2 cup diced bell peppers
  • 2 cloves garlic, finely minced
  • 2 tablespoons water
  • 1 teaspoon cornstarch (optional, for thickening)
  • 1 tablespoon olive oil or butter
  • 1/2 cup frozen peas (no need to thaw)
  • 1/4 cup chopped green onions (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
  2. In a bowl, mix the ground meat, breadcrumbs, egg, onion, garlic, soy sauce, black pepper, and salt until combined. Form into small meatballs about 1 inch wide.
  3. Sear meatballs in a skillet over medium heat for about 2-3 minutes per side until browned.
  4. In a saucepan over medium heat, combine honey, soy sauce, ketchup, water, and garlic; stir until bubbling.
  5. Spread uncooked rice in the baking dish, add bell peppers and peas. Pour chicken broth over everything and nestle meatballs in the mixture.
  6. Drizzle sauce over the top and cover with foil. Bake for 40 minutes; uncover and bake for an additional 10-15 minutes until cooked through.
