  • 1 cup light brown sugar
  • 1 cup smooth peanut butter
  • 1 large egg
  • 1/2 teaspoon pure vanilla extract
  • For the Cream Filling:
  • 1/4 cup softened unsalted butter
  • 1/2 cup smooth peanut butter
  • 1 1/2 cups powdered sugar
  • 2 tablespoons whole milk
  • 1/4 teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, whisk together flour, baking soda, and salt.
  2. In another bowl, cream the softened butter and brown sugar until smooth. Mix in the peanut butter, egg, and vanilla extract until well combined.
  3. Gradually add the dry ingredients to the wet mixture until a dough forms.
  4. Scoop small amounts of dough, roll into balls, then flatten slightly with a fork on a lined baking sheet.
  5. Bake for about 10 minutes or until lightly golden around the edges. Allow cooling before transferring to a wire rack.
  6. For the cream filling, beat together softened butter and peanut butter until creamy. Gradually add powdered sugar, milk, and vanilla until smooth.
  7. Spread or pipe the cream filling onto half of the cooled cookies and top with another cookie.
