  • 24 ounces fresh green beans
  • 8 ounces baby bella mushrooms
  • 1 cup vegetable oil (for frying shallots)
  • 4 tablespoons unsalted butter
  • 1 ½ cups chicken broth
  • ½ cup heavy whipping cream
  • ½ cup freshly grated parmesan cheese
  • 1 tablespoon garlic (minced or paste)
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons Dijon mustard
  • 1 teaspoon dried thyme
  • ½ teaspoon red pepper flakes (optional)
  • ¼ teaspoon ground nutmeg
  • Kosher salt & freshly ground black pepper (to taste)

Instructions

  1. Heat vegetable oil in a skillet over medium heat and fry sliced shallots until golden brown and crisp. Set aside.
  2. Bring salted water to a boil and blanch trimmed green beans for about 5 minutes; drain and set aside.
  3. In a saucepan, melt butter and sauté mushrooms and garlic until tender. Stir in flour to make a roux.
  4. Gradually whisk in chicken broth along with lemon juice, Dijon mustard, thyme, red pepper flakes, nutmeg, salt, and pepper; thicken for about 5 minutes.
  5. Combine blanched green beans with the mushroom sauce and half of the parmesan cheese.
  6. Transfer to a greased baking dish; top with remaining parmesan cheese and crispy shallots. Bake at 350°F (175°C) for about 25 minutes until bubbly.
