  • 4 bell peppers (any color)
  • 1 Tbsp olive oil
  • 4 cups fresh spinach
  • 1 tub (15 oz) ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • ½ cup sliced green onions
  • ½ cup chopped fresh basil
  • 2 large eggs
  • Salt
  • Pepper
  • 1 tsp each dried rosemary, dried thyme, and fennel seed

Instructions

  1. Preheat the oven to 400°F (204°C). Halve the bell peppers lengthwise and remove seeds. Place cut side up on a parchment-lined baking sheet and brush with olive oil. Bake for about 20 minutes until slightly softened.
  2. Microwave spinach for 15–30 seconds until wilted; roughly chop. In a bowl, combine spinach with ricotta, mozzarella, parmesan, green onions, basil, eggs, salt, pepper, and spices. Mix well.
  3. Fill each pepper generously with the ricotta mixture and top with breadcrumbs mixed with olive oil.
  4. Lower oven temperature to 350°F (176°C) and bake for an additional 30 minutes until golden brown.
