1 medium spaghetti squash
1 tbsp olive oil
½ cup diced onion
2 cloves garlic, minced
½ cup plain Greek yogurt
1½ cups shredded sharp cheddar cheese (divided)
¼ tsp salt
¼ tsp black pepper
Optional: ¼ tsp paprika or dried thyme
Instructions
Preheat your oven to 400°F (205°C). Halve the spaghetti squash lengthwise, scoop out seeds, and drizzle with olive oil. Place face-down on a baking sheet and roast until tender, about 40 minutes.
While the squash roasts, heat a skillet over medium heat. Sauté diced onions in olive oil for about 5 minutes until soft; add minced garlic and cook for another minute.
Once cooled, shred the roasted squash into strands using a fork.
In a large bowl, combine the shredded squash, sautéed onions and garlic, Greek yogurt, 1 cup of cheddar cheese, salt, pepper, and optional spices.
Transfer to a greased casserole dish, top with remaining cheese, and bake at 375°F (190°C) for 20–25 minutes until bubbly and golden.
